This is a video I've debated doing for a long time, in which I will be testing the claim that potatoes and rice can be cooked in a certain way so that it eliminates or significantly reduces the impact on blood glucose and ketones by creating "resistant starch". I STRONGLY recommend reading the articles linked below for a thorough description of resistant starch and the associated claims about it -- especially the Johns Hopkins article. I fully expected this experiment to be a HUGE fail, and as such, I didn't approach it with a whole lot of scientific rigor. Now that I've seen these initial results, I will be conducting more tests and making more videos with a far more controlled / scientific approach. That said, you should not expect a full lab study level of science out of this or any other video in this series.
